In The Interest Of The Pin

As Thing1 has shouted on several occasions:

"Woooooowhooooo! Another successful internet creation to table sensation! I LOVE THIS, Ducky!" (and I love this kid!)

and since we all wonder (I know this for fact. I'm omnipotent that way) whether a recipe we pin on the Trest of Pin is actually edible or not, I am sharing a couple of recent successes. We will steadfastly ignore the FAILS.

Everyone in our house has eaten and enjoyed these two quick easy meals. You really have to know Thing2 to be appropriately impressed with the weight of that statement. The kid doesn't eat anything but apples and Goldfish.



The first is a crock pot meal. SUPER EASY, very quick and only a few ingredients.

Call it what ya want. I don't rightly remember if it had a name or not.

4 boneless skinless chicken breasts
1 8oz  block of cream cheese
1 can of Cream of Chicken Soup
1 packet of Zesty Italian dry seasoning mix
Salt and Pepper to taste


Directions: Toss it all in the crock pot. Cook on high for 4 hours.

I served this over bow tie pasta and it was fabulous. You could easily use egg noodles or dumplin style noodles or even rice maybe. Very little in the way of left overs because everyone had second helpings. It does reheat just fine!

The second Internet Creation to Table Sensation is CheezIt Chicken. I found several versions of the recipe for this one and not all of them on Pinterest. I sort of picked and chose the parts that I liked and held my breath. It was fabulous...assuming you like CheezIts. In our house it is a food group unto its own.

I used a package of chicken tenders so it was easier for the kids to take the appropriate portions and less waste.

What you need: 
-skinless boneless chicken breasts or chicken tenders
-Half a box or so of CheezIts - placed in a baggie and beat the hell out of them. Great task for kid kitchen helpers. (Lil Duck did a fab job)
-Sour cream
-Melted Butter (about 1/4 cup)

 What to do: after beating the hell out of your CheezIts, coat/dredge chicken in the sour cream then cover in cracker crumbs.

Lightly spray a 9x13 pan and place chicken in the pan. Drizzle the melted butter over top of each chicken piece and bake at 375 for 40 minutes.

Great paired with just about anything. We had green beans and the always requested Mac N Cheese.

See, now I tried that first one and we all hated it. For some reason the cream cheese stayed in big chunks and didn't break down and the sauce was weirdly gritty. I've definitely had a mixed bag in terms of recipe success on Pinterest. For the first time ever, we had a dinner that went straight down the garbage disposal. It was called "Crowd Pleaser Chicken" and I advise you to avoid it like the plague. Ugh, shudders just thinking about it.

Another really good chicken one though (that I did find on Pinterest) that is similar to the Cheez It one is to mix 1/2 cup of sour cream and 1/4 cup parmesan cheese and bake at 400 for about 30 minutes. Super juicy chicken.

To get the cream cheese to melt better, cut it into cubes, then mash the cubes with a spoon. Think of it like velveeta! Also try boiling the chicken for a few minutes to prevent shredding, unless you want it shredded! Plus you can use the chicken stock. Later!

Sounds yummy! Cheezits make me swoon. My friend hosted a dinner party once where everyone had to make a dish they found on pinterest. Everyone walked in with the disclaimer, "I've never made this before so it might suck." But? They were all delicious! From apps, to side dishes, to the main dish to dessert! Fun idea for a party.

I made crockpot Pizza Noodle Casserole last night for the boys. That is probably what they'll have today as left overs. Or the Crockpot Hamburger Soup from the night before. I'm feeling lazy tonight .. lol

Not sure what is on our menu tonight but last night we had Stuffed Shells. It is a favorite in our house!

I LOVE Crockpot Cooking. It's so much easier and quicker :)

I make the first recipe (I call it Cream Cheese Chicken) AT LEAST once a month! It's my very favorite easy/delicious/everybodylikesit crockpot recipe.

(Psst...it also freezes well.)

But the second one...gonna have to try that!

Oh by the way...here's another Pinterest find that has been a huge hit in our house. Place several chicken breasts in crockpot, sprinkle each with a bit of mozzarella cheese, then cover each breast with pesto sauce (I use a jar from the store, and we prefer red pesto to green, but either works great). Turn crockpot on high and cook for three hours. About an hour before serving throw in some frozen or fresh green beans and continue to cook on high for last hour. Absolutely delicious!! Try it...I think you might like it!

(Sorry I don't know measurements, but I don't use 'em. Just toss it all in and use your own judgment!)
